What do you love most about baking?

Initially, I was attracted by the glamour of the French patisserie. I knew I wanted to become a pâtissier at five years old! When I started experimenting with baking, I fell in love with the ingredients and how rewarding the whole process is.

 

How did you first get involved with P&O Cruises?

First of all, they asked me to create a pop-up afternoon tea on board their other fantastic ships and also run a few masterclasses. I didn’t think twice about saying yes. Then, this led to a permanent residence on Britannia.

 

What will be on offer at Market Café?

Market Café is an all-day dining destination. It has exciting savoury offerings, such as charcuterie, cheeses and speciality breads, and well as fine patisseries with my own special twist.

 

Tell us about your new afternoon tea.

I’ve always been a fan of afternoon tea and I wanted to create a twist on this British tradition. As a result, the selection of savoury and sweet items will be very untraditional! There’s a lemon and black pepper smoked salmon macaroon, which is delicious. We’ve also got a strawberry waffle cone and passion fruit mousse pop cake! Of course, there are warm, freshly baked scones with dollops of cream and jam too, as well as something a little more unusual: a waiter will spritz an edible perfume of Earl Grey tea over your table!

 

What are you most looking forward to about cruising on Britannia?

There’s so much to be excited about. I’m looking forward to seeing the Cookery Club, where I’ll be teaching regularly. I’ll try every restaurant, of course, and the spa looks phenomenal. Cruise ship entertainment is always excellent, so I can’t wait to see the P&O Cruises troupe in action in the new theatre with its LED background.

 

Tell us about the baking demonstration classes that you’ll be holding?

I want to help people become more confident bakers by giving them recipes they can easily replicate at home. I’ll be showing them how to glam up their baked goods and share a bit of gossip on the baking world. The students will be able to taste their final products at the chef’s table with me.

 

What do you enjoy about teaching baking classes?

I was lucky enough to be trained by chefs who shared their passion of baking with me, so I like to think I’m giving something back. I like to show people that baking can be fun, uncomplicated and a very rewarding hobby.

 

What’s next for you?

I’ve just launched a baking app called Cake-Boy Classics, plus I’m working on two new recipe books, a bakeware range and my new YouTube channel. Life is pretty busy, but very exciting.
