Spain is a culinary powerhouse. Valencia’s paella, San Sebastián’s pintxos and Barcelona’s croquetas have put the country firmly on the map of foodies the world over. But to limit your gastronomic exploration to these established hotspots is to miss out on a cornucopia of dining experiences. 
 
So we’re going off-menu and homing in on three fantastic food cities that you can visit on a cruise to Spain’s Atlantic coast. It’s a region where the land is lush, the wine is world class, and fresh seafood plays a starring role. Be sure to pack your appetite…

Bilbao

<h2>Bilbao</h2>
Bilbao brings you the best of Basque – the culture, the beauty and, of course, the cuisine. The city is often overshadowed by its famously food-obsessed neighbour, San Sebastián, but you’ll find the same culinary quality and passion here, without the marked-up price tag.
Much of Bilbao’s food scene is condensed in the Old Town (Casco Viejo), where locals hop from one bar to the next and catch up over wine and pintxos. Pintxos are a speciality of the Basque region, and the key difference between them and tapas is that pintxos are single-bite snacks, usually skewered and served on a small slice of bread, while tapas are larger and meant to be shared. The obvious upside of smaller portions is that you’ve got room to try even more of them. And trust us, you’ll have plenty to choose from – la gilda (anchovy, olive and pepper on a skewer), croquetas, grilled mushrooms and txaka (surimi and mayo on bread) are a good place to start. The key with pintxos bars is to enjoy one or two with a small glass of wine, vermouth or beer, then move on to the next.&nbsp;
For Epicurean Bloom, we experimented with various infusions and garnishes to achieve the perfect balance of taste and visual impact. The inspiration was to mirror the restaurant’s ethos of modern fine dining, where provenance, presentation and sensory experience are paramount. We wanted a cocktail that would evoke a sense of nature and elegance, while also delivering a moment of theatre at the table. The use of blue butterfly pea flower, which transforms colour when mixed, brings that wow-factor, while the Champagne and floral garnish elevate it to something truly opulent and refined.

La Coruña

<h2>La Coruña</h2>
In La Coruña, it’s understood that a good dish starts with good ingredients. The focus here – and in the province of Galicia more widely – is simple food done well; top-quality, local produce prepared with skill and care. 
&nbsp;
Focusing on the building blocks doesn’t mean chefs aren’t pushing the boat out, of course – Árbore da Veira and Taberna 5 Mares are just a couple of Michelin-recommended restaurants where chefs are getting experimental with them. But you’ll find the same care and passion for provenance at tapas bars, rustic family-run tabernas and behind bar counters, where it’s easy to while away a whole afternoon tasting your way through gooey-centred tortillas, savoury raxo (diced pork loin) on chips and perfectly charred Padrón peppers.

Unsurprisingly for a city surrounded by the sea, La Coruña is big on seafood – scallops, velvet crab, king prawns. Eating octopus is a centuries-old tradition in Galicia, and there are strict regulations and traditions around both the fishing and cooking of it. Enjoy it served in the traditional way with potatoes, paprika and olive oil in a dish called pulpo a la gallega. 
 
The full La Coruña dining experience simply must include vermouth. Go authentic and saddle up to a vermutería (Vermutería Martínez is a local favourite). Locals like to enjoy it before lunch – in fact it’s a bit of a ritual – but it’s just as appetising at any time of day.

Vigo

<h2>Vigo</h2>
As Europe’s largest fishing port, Vigo is a veritable seafood mecca. Make the pilgrimage and you’ll be rewarded with a bounty of marine delights: mussels, razor clams, scallops, octopus and more, all of a superior quality thanks to the region’s cold, mineral-rich waters. On shore, lush valleys and fertile farmlands produce local delicacies such as tender veal and aromatic Rías Baixas wines 
 
But if you only eat one thing in Vigo, it simply has to be oysters. The moreish mollusc has a long history here, with its cultivation dating back to the Roman era. There’s even a street in the Old Town dedicated to them – known somewhat interchangeably as Rúa da Pescadería and Calle de las Ostras – where local fishermen bring in crateloads straight from the estuary every morning to be sold at the restaurants that line the street, such as O Portón and Restaurante Casa Vella.&nbsp;
Wander down Calle de las Ostras, order a dozen oysters and watch the vendors shuck them fresh, then follow the locals’ lead and knock them back with a glass of crisp Albariño – it’s Vigo on a plate.
