Recipe: Haddock with Welsh Rarebit


A Mediterranean twist on a British café classic

Haddock with Welsh Rarebit

Serves 2

Preparation time: 30 minutes


2 x 200g smoked haddock fillets, undyed

10g fresh chives

4 tomatoes

550g strong cheddar cheese

50ml beer

1 egg yolk

1 tsp English mustard

1 tsp Worcestershire sauce

Tabasco sauce to taste

1 tbsp breadcrumbs

salt and pepper

How to prepare

  1. Season the haddock with salt and pepper and place in a hot frying pan with a little olive oil. Cook for 5-6 minutes
  2. Place the egg yolk, mustard, breadcrumbs, a dash of Worcestershire sauce and Tabasco in a bowl
  3. Stir in the milk and beer then season well. Grate the cheddar cheese and fold into the rarebit mixture
  4. Top each piece of haddock with the rarebit mixture and place under the grill on a high heat until the top turns golden brown

To serve, place the pieces of haddock on plates and garnish with thinly sliced tomatoes. Drizzle with olive oil and chopped chives.
